Orzo with truffle oil and sundried tomato

Ingredients
1 1/2 cups orzo1 cup diced onion1 cup sliced mushrooms1 tsp garlic2 grams (about 1/5 cup) sliced sundried tomatoes1 tbsp olive oil3 cups chicken broth1 cup water2 tbsp butter1/2 cup grated parmesan1 tbsp truffle oil (optional)3 tbsp fresh chopped parsley
Directions
- Heat olive oil in stainless steel pan
- Add onion, mushrooms, and garlic
- Let cook stirring occasionally approximately 5-10 minutes
- Add salt and pepper and sundried tomatoes
- Add orzo and stir so it is coated in mushroom and olive oil juices
- Add chicken broth and water and let come to a slow lazy boil
- Let cook approx 15 minutes uncovered, once the orzo is al dente and there is still some water left add the butter, cheese, parlsey and truffle oil
-Serve as quickly as possible or keep covered until ready
