Ingredients
Chicken Broth (low sodium) - 3 cupsCelery - 1 cup dicedOnion - 1/2 cup choppedSalt - 2 tspPepper - 1 tspCarrots - 1.5 cups choppedCanned Corn - 1 canCrushed Tomatoes - 2 cansWater (tap) - 5 cupsCabbage - 1 large head choppedTomato Paste - 2 6 oz cansKidney Beans - 2 cansMushrooms - 1 cup choppedSpinach - 10 oz frozen choppedPeas - 8 oz frozenGreen Beans - 1 cup chopped
Directions
Pour all ingredients into large pot. Bring to boil and reduce to low heat. Let simmer for 2-4 hours.

    I made this recipe last night. It was fantastic! I changed the beans to 1 can dark kidney beans, 1 can white kidney beans, 1 can romano beans, and 1 can chickpeas. Other then that i followed the recipe and the while family loved it! - 5/13/09

    Made this soup last month. Ate a bowl full and froze the rest in individual bowls so I'd have something quick and easy to bring in to work.     I left out the corn and kidney beans to make this soup virtually 0 points (with a reasonable serving size). Our whole family ate it and enjoyed it and it was a great way for my husband and I to fill up a bit before dinner. - 1/24/10

    It's worth the effort to make this soup. You can freeze some for other meals and you can eat enough to really fill you up since it's so low in calories and fat. Try different spices to change it up a bit. - 3/8/09
