Chicken Broth (low sodium) - 3 cupsCelery - 1 cup dicedOnion - 1/2 cup choppedSalt - 2 tspPepper - 1 tspCarrots - 1.5 cups choppedCanned Corn - 1 canCrushed Tomatoes - 2 cansWater (tap) - 5 cupsCabbage - 1 large head choppedTomato Paste - 2 6 oz cansKidney Beans - 2 cansMushrooms - 1 cup choppedSpinach - 10 oz frozen choppedPeas - 8 oz frozenGreen Beans - 1 cup chopped
Pour all ingredients into large pot. Bring to boil and reduce to low heat. Let simmer for 2-4 hours.

Made this soup last month. Ate a bowl full and froze the rest in individual bowls so I'd have something quick and easy to bring in to work.
