blueberry french toast

Ingredients
2 slices light, high fiber bread 1/4 c egg beaters4 teaspoons splenda, divided1/2 teaspoon vanilla extract1/2 teaspoon cinnamon1/3 cup frozen blueberries1 teaspoon corn starch1 teaspoon lemon juice1 teaspoon of water
Directions
Spray a frying pan with cooking spray and heat over medium heat. Mix egg beaters, vanilla, cinnamon and 2 teaspoons of splenda in a pie plate. Place bread into egg mixture, then flip to abosorb all of the egg. Place in frying pan. Meanwhile, combine lemon juice, water, cornstarch. Mix to remove any lumps. Add frozen blueberries and 2 teaspoons of splenda. Mix to coat. Microwave for 1 minute. Flip french toast. When blueberries are done, take french toast out of pan and place on plate. Pour blueberries on top. YUM!
