French Pancakes - Gluten-free option

Ingredients
1 C Milk2 T Butter2 Eggs, slightly beaten1/2 C Flour1 t Baking Powder1/2 t Salt
Directions
Heat milk and butter in a saucepan. Cool slightly, then beat in eggs, flour, baking powder and salt. Beat until smooth. Batter is very thin. Cook like regular pancakes or grease a small skillet lightly. Heat skillet and pour in batter, 1/4-1/3 cup. Tilt pan to coat bottom of pan. Cook about one minute, loosen with spatula and flip onto heated griddle. Turn several times until a delicate golden brown. Makes 10 thin pancakes.
