Quick Whole Wheat Molasses Bread

Ingredients
1 & 2/3 cups light buttermilk or plain yogurt or 1.5 cups milk and 2 TB white vinegar.2.5 cups whole wheat flour..5 cups cornmeal1 tsp salt1 tsp baking soda1/2 c. molasses
Directions
Preheat oven to 325.
Spray 8x4 or 9x5 loaf pan w/ spray.
If using milk & vinegar, mix and let rest while you prepare other ingredients.
Mix dry ingredients.
Stir molasses into buttermilk, yogurt, or soured milk.
Whisk liquid into dry ingredients and then pour into loaf pan.
Bake until firm (about an hour)-- cool about 15 minutes before removing from pan.

    Delicious bread but directions somewhat misleading. I used yogurt and had to use a pastry cutter to incorporate the ingredients which were like a heavy cookie dough. Also, "batter" needed to be pressed into pan. If you use yogurt, "whisking" and "pouring" probably will not be possible. - 11/28/12

    I think this is a Mark Bittman recipe. Anyway, I made it last night to go with some veggie lasagna and it was delicious! This morning I put an egg & veggie sausage on it and the sweet added a great contrast to the savory! loved it! - 3/7/11
