Hominy and Chicken Enchilada Casserole

Ingredients

1 can of Golden Hominy1 can Green Enchilada Sauce2 cups cooked chicken breast1 can diced green chilis2 eggs beaten1/2 reduced fat sour cream3/4 cup of Shredded Cheese (Monterrey Jack is best but I just used what I had)
Preheat oven to 375
Spray a 2 quart baking dish with cooking spray
Combine all ingredeints except for the cheese, in the baking dish ( I used a 2 quart casserole dish)
Season to taste
Top with shredded cheese
Cover with lid or foil and bake for 30 minutes depending on depth of baking dish you may reduce this to 20 minutes.
Uncover and bake for another 10 minutes.
Allow to sit for 10 minutes and serve.
