Vegetarian Ceviche

Ingredients
Avocados, California (Haas), 1 fruit without skin and seeds (Cucumber (peeled), 1 medium (*Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" *Red Onion, Fresh, 1 cup Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Jalapeno Peppers, 1 pepper Hearts of Palm, 220 grams (14 oz can)Red Ripe Tomatoes, 1 cup, chopped *cilantro (fresh), 0.5 cup Olive Oil, .25 cup Juice from 2 limesground cumin, .5 tspsalt and pepper to taste
Directions
Slice avocado. Dice cucumber, peppers, and red onion. Slice hearts of palm and pop out the centers so they look like rings. Chop cilantro. Mix all vegetables together in a bowl. Mix lime juice, olive oil, cumin and salt and pepper to taste. Pour over salad and toss. Chill for 15 minutes.
