Ingredients
6 eggs6 egg whites4 slices ham diced1 1/2 cup mushroom diced4 green onions diced6 oz light shredded cheese1/4 cup nonfat milk
Directions
saute mushroom on med low heat until brown crispy on ends add onion and ham cook additional few minutes mix egg milk together pour in pan add mushroom mixture combine cook with out disturbing sprinkle with cheese let continue to cook flip over cook other side and slice

    We minced the mushrooms to disguise for kids. And added a poblano pepper ( Husband has to have spice. Only variation on cooking was didn't flip. Just let it in pan until almost set and 5 minutes before, put in broiler. Sets, cheese melts and no need for flipping. Thanks - 8/7/12
