curry shrimps and tofu

Ingredients
2 cups water1 can (400ml) coconut milk1 tbsp curry paste2 pkgs mushroom sliced1 lg bell pepper sliced1 onion diced3 carrots sliced454 g firm tofu400 g raw shrimps 2 tbsp cornstarchlime leaves minced to taste
Directions
Put everything in a saucepan except cornstarch, shrimps and tofu. Cook for 5 min.
Add the shrimps and tofu and cook for 10 min.
Thicken with the cornstarch(mix with 1/4cup cold water)
Add salt to taste

makes 8 1-cup servings

you could also put some lemongrass in it
