White Bean & Spinach Soup

Ingredients

2 large carrots, peeled and diced1 large rib of celery, diced1/2 large or 1 medium onion, diced2 cloves of garlic, minced1 tsp red pepper flakes (more or less depending on level of desired heat)2 tsp dried italian seasoning1 undrained can white beans (cannellini or great northern) 4 Cups of chicken or vegetable stock10 oz. bag of baby spinach1/2 C petite diced tomatoessalt and pepper to taste
Makes 4 - 2 cup servings!
Lightly coat a 6 to 8 quart pot with cooking spray. Saute' carrots, celery, onion, and garlic for about 5 minutes until slightly tender. Season with red pepper flakes and italian seasoning.
When veggies are tender add stock, beans and tomatoes and bring to a boil. Simmer for approximately 5 minutes until heated through and add spinach. Stir spinach down into the soup and cook for another minute until spinach is wilted into the soup. Check for seasoning, if needed add a little salt and/or pepper to taste.
