Sweet Potato Salad with Apple and Lime and cilantro

Ingredients
1 pound sweet potato, scrubbed and cubedPinch of sea salt1/4 cup raw pumpkin seeds1 large apple, seeded and cubedHandful of cilantro, chopped Juice and zest of 1 lime2 tablespoons olive oil2 teaspoons agave nectarSea salt to taste1/2 avocado, cubed
Directions
Boil sweet potatoes with a pinch of sea salt till tender, but not mushy. Drain in colander. Toast pumpkin seeds in a dry skillet over a medium flame. Stir constantly and they will begin to pop around when done.

Place in medium bowl. Add apple, corn, and cilantro with wet ingredients in bowl. Combine all ingredients, stir well and add sea salt to taste.

Stir in avocado and serve.
