WWM's Big Batch Bran Muffins

Ingredients
15.5 oz box raisin bran.75c dried fruits2 c boiling water4.5 c + 3T flour5 tsp baking soda1 tsp salt2 c. low fat buttermilk4 eggs.5 c orange marmelade1.5 c applesauce unsweetened1 c granulated sugar.5 c + 2T veg oil2 tsp vanilla extract
Directions
Add cereal & fruit with boiling water until softened. Mix other dry ingredients. In food processor combine 1 c of buttermillk, eggs & marmelade until smooth. Combine ingredients, cover with plastic wrap & refrigerate at least 24 hrs. When ready to bake, preheat oven to 375, fill 2.75" muffin cups 66% full, bake 20-25 min. Cool 2 min, then remove to cooling rack. Batter will keep up to 1 month in fridge.
