baked french toast w cream cheese and raisins

Ingredients
5 slices of wheat bread1 oz fat free cream cheese1/4 c raisins2 eggs3 egg whites3/4 cup milk2 tsp vanilla extract1 tbs cinnamon
Directions
Preheat oven to 350.

beat eggs, whites, milk, vanilla, and cinnamon together.

Cut all the bread in half and spread a light layer of cream cheese on each piece. Place five pieces cream cheese side up in 8x8 pan. sprinkle raisins on each piece and top with other five piece cream cheese side down. Pour egg mixture over all, making sure it coats the bottoms as well. Cover with foil and bake for 30 min. Uncover and bake another five or ten minutes.

Eat with or without fat free/sugar free syrup.

    I got this recipe years ago as a Father's Day breakfast special. The recipe called for the usual frying, but I baked it. Try it mixing finely chopped peaches, strawberries, etc. into the cream cheese. Scrumptious! - 7/24/09
