Veggie & cheese Omlet

Ingredients
1 Cup of sliced vegetables ( pick any combo , broccoli, mushrooms, tomatoes, peppers, spinach) and fresh herbers ( like parsley or basil)2 eggs2 tablespoons water1/4 tes. seat salt and black pepper1 tbsp. lowfat cream cheese1/2 tbsp olive oil
Directions
Coat a nonstick skillet with 1/2 tbsp of olive oil.Add vegetables and herbs, saute for 4 mins or until soft, set aside. Whisk eggs, water, salt, and pepper together in a bowl. return pan with vegtables to the stove top, pour in egg mixture. Cook for about 3 minutes or until omlet is set.

Top omelet with cream cheese and fold in half. Gardnish with fresh herbs or fresh diced tomatoes if desired.
