Ingredients
2 large cloves of garlic8 very red tomatoes1 English cucumber1 C onions6 mini vine peppers6 Tbsp olive oil2 Tbsp sherry vinegar1 Tbsp + salt2 C water
Directions
Wash and cut ingredients into chunks
Put all ingredients through a food processor and then a sieve.
Adjust salt and vinegar to taste
Chill very well; or add ice instead of water to chill faster
Add more water to make a drink instead of soup

    This is a great way to get extra vegetables in! I didn't know what an English cucumber is, so I just used a regular cucumber. I also used my blender and didn't bother using a sieve, which both ended up being fine. The only change I would make is to reduce the salt a bit. - 9/5/13
