collard bread

Ingredients
collard mix:4 cups chopped collard greens (I used fresh but you can use frozen already chopped)2 tbspns of green onions chopped thinly1/2 cup of green pepper chopped3 eggs1/2 cup milk2 tbspns flour1 to 2 tsp seasoned salt of your choice1 cup shredded cheddarbread topping:6.5 oz packet of cornbread mix1 egg1/3 c. milk2 tbspn melted margarine/spread of choice1/2 cup chopped peppers2 tbspns green onion
Directions
Preheat oven to 350.
Set aside the greens in a big bowl and add the egg mixture and the green onions and peppers to stir it up and blend well. then add in the cup of cheese and blend again. place in the bottom of an 11X7 baking dish/pan coated with cooking spray. Bake for approximately 30 minutes.

Remove from oven and top with the cornbread mixture, spreading evenly across the top of the casserole filled with collards.
replace in the oven and cook for another 25 minutes or so - until the top is beginning to get golden. remove and allow to cool and cut up -

makes 6 servings.

    I wanna thank you for this recipe. I saw it on another site and it was missing information. It didn't mention at what point to use the cornbread mix. I soo wanted to make this, i almost got discouraged, as i didn't want a failed recipe. But i found this one, made it today, just out of the oven :-) - 11/7/14
