150 grams butter1/2 cup of sugar2 eggslemon juice from 2 large lemonslemon rind from 2 large lemons1 1/2 cups plain white flour1 tsp baking powder1/4 cup of non fat milk
Beat butter and sugar together. Add eggs one at a time and beat until creamy. Add lemon juice and rind and mix in thouroughly. Sift in flour and baking powder. Mix thouroughly. Mix in milk. Pour into greased square cake tin 12 inches by 8 inches. Cook in moderate oven for 25 minutes or until skewer comes out clean. Makes 24 pieces
