Best Banana Bread Ever

Ingredients
1 3/4 Cup Flour1 1/2 Cup Sugar1 tsp baking soda1/2 tsp salt1/2 cup egg substitute1 cup mashed banana1/2 cup canola oil1/4 cup plus 1 Tbs. buttermilk1 tsp. vanilla1 cup chopped nuts (not figured into nutritional facts)
Directions
Combine eggs, banana, oil, buttermilk and vanilla. Stir in flour, sugar baking soda and salt. Stir until just combined. If using nuts fold into mixture. Pour into one 9"x5:x3" pan or three smaller pans. (I line with foil sprayed with Pam) Bake at 325 degrees for 1 hour 20 minutes if using large loaf pan and 55 minutes if using smaller pans. Test with toothpick for doneness. Cool
