Thai-style turkey

Ingredients
One package of ground turkey (I like Jennie O)One limeOne half of a bunch scallions, choppedFew cloves garlicFish sauce to taste, several tbspsRed pepper flakes to taste, 1-2 tsp
Directions
This is the easiest and most delicious thing. My husband and I never agree on food, and we both LOVE this. Also keeps well as leftovers.

Heat the olive oil in a large pan over medium heat and add the pressed or chopped garlic.

Add all the ingredients: the package of turkey, the juice of one lime, the chopped scallions, the fish sauce, and the red pepper flakes.

As the turkey cooks over the next 30-40 minutes, periodically chop up the turkey with the edge of a wooden spoon. The goal is to get really small bits of turkey.

Keep cooking until the turkey is in small bits and they have gotten dark and caramelized. Stop cooking right before the turkey burns.

Serve over white rice. Serves 4.

    This has become a big hit for us. I did discover that if you choose white meat turkey it is only 8g fat per serving. I also add a cup of shredded carrots and a cup of chopped zuc. It is also good with a squeeze of ginger. - 6/19/10
