Brown Rice Chicken Paella

Ingredients
2 cups Uncooked brown rice4 Chicken thighs1 jar Marinated artichoke hearts, chopped.1 jar Roasted bell peppers, chopped1 Onion, sliced.1-14 oz Can diced tomatoes2-14 oz Cans chicken broth1 cup WaterPaprika1/8 teaspoon Saffron˝ teaspoon OreganoSalt and Pepper
Directions
Crush saffron with fingers and add to water and set aside.

Season chicken with salt, pepper and paprika. In a large skillet, sauté chicken. Cube chicken. Set aside.

Sauté onion in skillet.

Add rice to skillet, and allow to toast for a few minutes.

Add chicken back to pan. Season with oregano, paprika, salt and pepper.

Add broth, water and juice from tomatoes. Cover and simmer for 20 minutes.

Stir in artichoke hearts, tomatoes and roasted peppers. Re-cover and simmer for 15-20 minutes.
