Ruth Sheets's Famous Spinach Balls

Ingredients
Directions
1 10-oz package frozen spinach1 egg, beaten1/4 c. melted margarine (you can use butter)1 medium onion, chopped fine1/2 c. grated parmesan cheese1/2 c. gluten-free potato flakes1 tsp rosemary1/4 tsp pepper
Combine all ingredients and mix well. Rolls into balls about the size of small walnuts.
Put in refrigerator overnight (or at least 2 hours to set). Then preheat oven to 350 and place balls on a greased baking sheet.
Bake about 30 minutes, until brown on bottom. (Balls may flatten in gluten-free recipe but they still taste great.)
Makes about 30 balls.
