Cauliflower and Red Lentil Curry

* Onions, raw, 0.5 large * *Garam Masala, 3 tsp * Salt, 1 tbsp * Red Ripe Tomatoes, 2 medium whole * Cauliflower, raw, 1 head, medium (5-6" dia) * Sweet potato, 2 sweetpotato, 5" long * Olive Oil, 1 tbsp * Lentils, 1 cup * *Coriander seed, 2 tsp * Allspice, 1 tsp * Cardamom, ground, 1 tsp * Ginger, ground, 0.5 tsp * *Cumin seed, 2 tsp
1. Fry onion in oil with the spices.
2. Add lentils with a cup of water. Cover and simmer for about 10 minutes.
3. Add sweet potato & cauliflower, salt to taste and a little bit more water.
4. Cover and simmer until lentils are soft and veggies cooked through (but cauliflower not mushy).
Serve with roti's
