Layne's Home-made Paella (Shrimp & Scallops)

Ingredients

1 small summer sqash, chopped 1 small zucchini, chopped1 red bell pepper, diced1 medium yellow onion, diced1/2 lb. shrimp1/2 lb. scallops2 Tblsp olive oil1 cup short grain white rice1 can diced tomatoes (italian style) 1 box veggie broth (approx. 2 cups)1 tsp saffron threads1 tsp paprika1/4 tsp pepper1/4 tsp lemon pepper
Sautee shrimp & scallops in 1 Tbsp. Olive oil, set aside.
Sautee onion, pepper, squash & zucchini.
Add diced tomatoes and broth to sauteed veggies.
Add in cooked shrimp & scallops.
Season with saffron, lemon pepper, paprika & pepper.
Pour in one cup of rice.
Allow mixture to simmer down until rice is cooked and begins to caramelize on edges.
Enjoy!
(this recipe cooks best in a paella pan or a large wide pan)
