Slamin' Salmon Patties

3 cups canned salmon1/4 cup chopped onion1 clove garlic, mincedpepper to taste2 eggs1/4 cup flourpam1 tsp olive or canola oil
Drain the salmon, discard skin and squish bones between your finger and thumb. Mix the salmon, onion, garlic, pepper, and eggs in a bowl.
Heat a skillet on medium-high, when hot spray with pam and add the olive oil.
Form 1/5 of the mixture into a patty, dredge in flour mixed with pepper, place in the skillet. Repeat with 4 more patties, using the remaining mixture. Turn when first side is browned. Remove to a paper towel to drain with second side is browned. Place on a baking sheet and cook in a preheated 350 degree oven for about 20 minutes, until patties are firm.

Seems like it would be runny without any flour mixed up in it to keep it together. I understand the flour you dip it in but it needs oats or flour to give it some substance. It would fall apart with the 2 eggs in it. - 8/21/09

Actually, they aren't. I've been making these for over 20 year and never added anything more than onion, garlic and pepper.
I did forget to mention, you will want to form all the patties before dredging them in the flour, or you end up having to wash your hands between each one.
