Roasted Cauliflower

Cauliflower, 2 cups (1 small head), broken into medium-sized floretsOlive Oil, 2 tbsp Water, tap, 1/3 cupGarlic, 3 cloves1/2 t. crushed red pepper flakesParmesan Cheese, grated, 2 tbsp Pepper, black, 1 tsp
Set the oven to 350 degrees. In a large bowl, toss the cauliflower with 1 T. of the oil, plus the water, garlic and crushed red pepper flakes.
Spread cauliflowe on a large rimmed baking sheet. Roast for 40 minutes, stirring every 10 minutes, or until the florets are tender and caramelized.
Place the cauliflower in a bowl and toss with the remaining ingredients. Add pepper to taste.
Serves 4.

The recipe is a good base. You can adapt it easily. I will put cauliflower in foil next time so that is moist. I will definitly make it again! - 8/29/09

Ooh that's a good idea. I think I'll also try it with more cooking spray rather than oil.
