Zucchini Bran Muffins

Ingredients
Post Bran Flakes Cereal, 2.5 cupsSilk, Vanilla Soymilk, 2 cups Egg, fresh, 2 large Applesauce, unsweetened, 1 cup Molasses, 5 tbsp Vanilla Extract, 2 tsp Zucchini, 3 cup, shredded*Whole Wheat Flour, 2 cup Brown Sugar, 1 cup, packed Baking Powder, 2 tsp unpacked Baking Soda, 2 tspCinnamon, ground, 2 tbsp Nutmeg, ground, 1 tbsp Pecans, 1 cup, chopped
Directions
Pre-heat oven to 425*

Mix Bran cereal and Soymilk set aside

Mix beaten eggs, applesauce, molasses, vanilla, zucchini, mix well. Add Bran/milk mixture.

mix all dry ingredients together and add to wet mixture. Do not over mix the batter.

line muffin tin with paper liners, or spray with non stick spray.

bake muffins for 15 -20 minutes, until knife comes out clean.

makes about 30 muffins.
