Baked Cod with Crispy Lemon Herb Topping

10 oz. cod cut into serving pieces24 Ritz crackers (low fat are best but this recipe is based on regular because that is what I had), crushed to pea sized pieces3 T. Hellman's Olive Oil Mayonnaise1/2 t. garlic powder2 T. dill, basil or parsley (or combination)1/4 t. lemon zest1 T. lemon juice
Preheat oven to 450, put rack on highest slot.
Spray a 4 sided cooking sheet with olive oil (adds fat not calculated in recipe)
In a bowl, mix cracker crumbs and 1 T. herbs, set aside
In a seperate bowl mix mayonnaise, 1 T. herbs, garlic powder, lemon zest and lemon juice
Put cod filets on baking sheet, sprinkle with salt and pepper
Brush filets with mayo mixture
Press cracker crumbs into filets.
Bake 8-15 minutes (mine took 12).
*We used 2 T of dill and even I, who loves dill, thought that was a bit too much. We will change it up to 1 T. dill and 1 T. parsley next time. The original recipe says if you break the crackers into smaller than pea sized pieces they won't get crispy.
