Pear Oatmeal Muffins

1 cup Quaker's Old Fashion Oatmeal1 cup Rice Milk1 cup whole wheat Flour1/2 cup brown sugar1/2 cup medium pear peeled,cubed, boiled and blended 2 egg whites1 tsp. Baking Powder1/2 tsp. Baking Soda1/2 tsp. salt1 tsp cinnamon1 tsp. sugar1/3 cup cashews, roasted
Makes 12 medium size muffins
Soak the oats in rice milk for about an hour.
Preheat oven to 400 degrees F.
Place paper muffin papers in muffin pan
Cook pear and blend in a blender.
Measure out 1/2 cup and add to oat mixture along with egg whites
In a separate bowl measure and stir dry ingredients together.
Add wet ingredients to dry and mix just until combined. Add Cashews or Almonds
Spoon mixture into muffin cups.
Combine the cinnamon and sugar and sprinkle over the top of each muffin
Bake for 20 -25 minutes or until done.
Remove from pan and place a clean teatowel over them untill cool.. This will aide in removing the paper cups. You may of course oil the pan and eliminate the paper cups but I try to cut back the fat content by using the paper.
