Chicken Enchilada Soup

Ingredients
Ingredients:*Weight Watchers Smart Ones Chicken Enchilada Suiza, 2 boxesRed Ripe Tomatoes, 3 large whole or 1 can whole tomatoes*Zuchini 1 cup, 1 cup (yellow and green to make it look nice)Chicken Breast, no skin, 6 ounces (already cooked)Chicken Broth, 4 cup (8 fl oz) Onions, raw, 1 cupCilantro, raw, 2 tbsp Pepper, red or cayenne, 1 tsp (or red pepper flakes)Green Peppers .5 cup 1 cup chopped brocolli 1 tsp of olive oil
Directions
Saute the zuchini, bell peppers & onion with 1 tsp of olive oil in a 4 quart saucepan.
Add 4 cups of chicken broth and spices.
Add tomatoes and brocolli
Add chopped up or pulled apart cooked chicken breast (I make these ahead and freeze them for lots of different dishes).
Heat WW chicken enchilada suiza dishes (both at same time for 5 minutes). Scoop into saucepan with all remaining ingredients.

Heat and serve! Makes 4 very good sized bowls of soup.. yum!
