Ingredients
Directions
Water, 5 cupsBlack Eye Peas, Dry, 1 lb bag1 Medium Onion Diced2 Cloves of Fresh Garlic DicedCayenne Pepper , .5 tsp Ground cumin, 1.5 tsp Black Pepper (Gound), 1 tsp Bay leaf, whole, 2 serving
Sort and Rinse Black Eye Peas. Place all ingredients in the crockpot. Stir and cover. Cook on low for 6 - 7 hours. Remove bay leaves before serving. Makes 12 half cup servings.
**Note: Traditional Black Eye peas get their flavor from ham hock. The amount of spices I have suggested are enough to give the peas flavor and kick, but still mild enough for my children. These spices can be adjusted to suit your taste. There is no salt added to keep these low sodium.
