Low-Fat Pina Colada Muffins

Ingredients
1 cup regular rolled oats (not instant)1 cup non-fat milk1 cup whole wheat flour1/2 cup brown sugar3/4 cut crushed pineapple2 egg whites1 tsp vanilla extract1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 cup unsweetened coconut
Directions
Soak oats in cup of milk for one hour. Mix all dry ingredients in bowl. Add egg whites, pineapple and vanilla to milk and oats. Just fold in until blended. Spray 12 muffin pan with pam and fill with batter. Bake at 375 for 15 minutes.
