Ricotta Pesto

2 garlic cloves1 c. fat free ricotta cheese2 c. fresh basilsalt to taste (I used 1/4 tsp)pepper to taste (I used 1/8 tsp)
chop garlic in food processor. add ricotta, process until smooth. add basil, process until smooth again. salt and pepper to taste. this will amply cover a 1 pound box of pasta.
serve with pasta. you might want to stir a couple of tablespoons of pasta cooking water into the pesto to lighten it up.
