1 tsp olive oil2 Tbsp chopped celery2 Tbsp chopped onion2 Tbsp chopped bell pepper1 clove garlic, minced1 1/2 cups chili beans in chili sauce1 cup dark red kidney beans1/2 cup great norther beanschili powderCayennecuminpepper
Heat the olive oil in a medium saucepan, add the vegetables and saute. Add the beans and their juice, add the seasonings to taste (I usually use about 2 tsp chili powder, 1 tsp each of cayenne and cumin, and 1/2 tsp pepper - adjust up or down if you like it spicier or milder), stir and simmer for about an hour and a half.
You can serve your chili with any or all of the following (not included in nutritional calculations)
shredded cheese (cheddar or pepper jack)
sour cream
chopped onions
chopped chives
crackers
corn bread
