3 Tbsp extra virgin olive oilButterball Smoked Turkey Sausage, 14 ozGarlic, 6 cloves Red Potato, 4 medium potatoes (about 6 oz each)Kale, 2 large bunches, chopped (about 10 cups)Organic Free Range Low Sodium Chicken Stock, 8 cup (64 oz)Kosher Salt, 2 tspBeans, great northern, 2-16 oz cans, rinsed
Makes ~12 servings.
Heat the olive oil in a wide, deep soup pot over medium heat.
Add sausage (chopped into small pieces) and garlic and cook for 5 minutes over medium heat.
Dice the potatoes (I keep the skin on), wash & stem the kale and slice into strips. Add the potatoes and kale to the pot and add the stock.
Boil, then reduce heat and simmer for 20-30 minutes.
Add the beans and heat through.
