Betty's Ceviche (Flounder Salad)

Ingredients
1 pound uncooked flounder, chopped fine1 fresh jalapeno, chopped fineLime juice of 15 limesSalt2 tomatoes, diced1 onion, chopped fine1 cup cilantro, chopped
Directions
Combine the fish, jalapenos, lime juice, salt, tomatoes, onion, and cilantro. Mix well.
Cover with plastic wrap and refrigerate overnight.
May be eatten with boiled potatoes or on a bed of romaine lettuce.

    It's not raw anymore due to the action of the lime, that really cooks the fish, you can see it.

    Yummy! Had this first in Panama with corbina. Didn't know it could be made w/flounder. Excellent! Lime juice cures the fish to it's not "raw"..but it IS great! - 1/27/08

    The fish isn't raw - lime cooks it. My MIL (husband is Peruvian) taught me to make this, and as a white girl, I LOVE it. They tell me that true Peruvian ceviche never uses tomatoes, though, and I wouldn't eat it w/ tomatoes. Other than that, YUM! - 1/16/08

    I am peruvian and love this dish, the bad thing is the chilie: which is not jalapeño, that one is mexican, the taste is different from the original "yellow pepper" paste (in latin stores). You don't use tomatoes and also you serve it with baked sweet potatoes and a bed of boston or bibb lettuce - 1/14/08
