Irish Stew

Ingredients
6 medium potatoes, sliced2 large onions sliced3 lbs. cubed lambsalt and pepper1 tsp. thyme5 cups water
Directions
8 servings
Layer half of the sliced potatoes, half the onions, all lamb, repeat onion layer finish with the potatoes. Salt and Pepper. Add Thyme.
Cover with 5 cups of water.
Bring to boil, cover and simmer for 1 1/2 hours., or place in oven after bringing to boil and bake at 350 for 1 1/2 hours

    I don't use lamb, but I make this all the time when I want something simple for the family. I suppose it isn't really Irish Stew once you take the lamb out, huh? LOL!!!
