Cilantro Lime Shrimp w/Orzo

Ingredients
12 oz frozen shrimp2 cups Orzo1/4 cup chopped cilantro1/4 cup chopped parselyapprox 24 cherry tomatoes, quartered2 tbsp Land of Lakes spread (or something similar)juice 1/2 lime1/2 cup white wine3 cloves garlic, mincedsalt to taste
Directions
Makes 6 one cup servings

saute garlic in melted butter, add lime juice, wine, cilantro, parsley, tomatoes, cooked thawed shrimp
Cook shrimp mixure until liquid is reduced about a third.

In a separate pan, cook orzo according to directions. Drain cooked orzo and add to shrimp mixture.
Salt to taste.

    I'm cooking this for dinner tonight, but one thing you can do as a substitute for the wine...If you're buying raw shrimp with the shells on (like I do), take the shells off and cover them with water and a little lemon juice and let it simmer for about 5 minutes. Use that water. - 3/16/10

    Maybe a little chicken broth in place of the white wine. That will add moisture but not the same flavor as the white wine.
