Taco Salad - Chicken

Ingredients
1 lb ground chicken or 2 chicken breasts finely chopped.1 tsp cumin3-5 shakes chipotle Tabasco sauce1/2 tsp chili powder1/2 small onion chopped1 garlic glove minced8 cups chopped romaine lettuce (ie 2 romaine hearts)4 tbsp sour cream (this recipe uses tofu sour cream)8 tbsp salsa
Directions
Brown ground chicken or chopped chicken breasts with all the spices listed, onion and a garlic clove. You can also use taco seasoning but I like to do it from scratch.

Chop romaine lettuce to desired consistency.

Add sour cream and salsa to the top - about 1 tb of sour cream and 2 tb salsa. You can also add guacamole if you have it but its not included in the calories here.

Pour 1/4 of the chicken mix over the salad mix and enjoy.

I also brown a tortilla in the oven at 425 for 8 minutes and break over the salad to add some crunch. I use the super small ones so it only adds an extra 100 calories.
