Jen's Corn Chowder

1 pound turkey bacon, cut into small pieces2 stalks celery, chopped2 small onions, diced4 cloves minced garlic1 tbsp butter1 (14.75 oz) can cream style corn1 (15.25oz) can whole kernel corn4 cups chicken broth6 small potatoes, chopped2 carrots, chopped2 cups skim milk2 tbsp cornstarch½ tsp salt½ tsp ground black pepper½ tsp white pepper1 tsp red pepper flakes
1. Fry bacon in pan until almost done (should be crispy). Add onions, celery, and garlic and sauté until lightly browned.
2. Transfer to large pot. Add cream style corn, whole kernel corn, butter, and broth. Add carrots and potatoes. Add salt, black pepper, white pepper and red pepper flakes. Cook for about 15 minutes on high.
3. Mix cornstarch together with water to form a paste.
4. Add milk and cornstarch mixture. You may need to add more cornstarch mixture to thicken to your liking. Simmer for 30-45 minutes or until ready to eat.
Makes 12 one cup servings

This recipe was YUMMY! A big hit with my young kids & hubby. I made a couple of revisions, just based on what I had in the house. I used only 9 slices of turkey bacon. Started the bacon in the pot I was going to cook in. Used olive oil instead of butter, 1% milk and pureed the whole thing. - 4/5/09
