Healthy Pot Roast

Ingredients
Beef chuck, arm pot roast, 2 lb Carrots, raw, 2 cup, chopped Red Potato, 1 lbsCelery, raw, 1 cup, diced *Extra Light Olive Oil, 1 tsp
Directions
You will need a crock pot for this recipe. Lightly brown the beef chuck in the 1 tsp of light olive oil. While pot roast is browning place washed potaotes in the bottom of crock pot. After roast is nice and brown, place it in the crockpot on top of potatoes and place carrots on top of the roast and pour enough water to cover all. Cover with lid and set on low for 8 or high for 4 hours at 30 min before serving time add the celery. An hour before serving, take out meat and cut into bite sized pieces. Place meat back in cooker and continue cooking.

Makes 10 servings. You may add more veggies as needed. But remember to add the extra cals into your tracker.

    Thank you for posting a yummy recipe for real, healthy, pot roast. This doesn't even have added salt, yay! I do add low-sodium liquid smoke. I won't eat it away from home, since it's made from high fat cuts of meat. I buy healthy frozen versions occasionally, but I prefer home-cooked. - 1/23/10

    I make a pot roast just like this, but I do not add ANY water to it. I just rub roast with rub and place on top of the veggies and turn on high!! - 7/31/07
