Roasted Beets with Gorgonzola, Walnuts & Arugula

Ingredients
8 medium sized roasted beets1/2 cup toasted walnuts3 oz crumbled Gorgonzola or other blue cheese2 cups of fresh baby arugula 1/4 tsp kosher salt1/4 tsp fresh ground black pepper2 tbsp good olive oil 1 tbs white balsamic vinegar
Directions
Scrub beets, wrap individually in foil, place in baking dish and bake at 400 degrees for approximately 1.5 hours or until cooked. Cool and peel beets. Cut into bite sized pieces. Sprinkle with salt and pepper, balsamic and olive oil. Toast walnuts, roughly chop and sprinkle in with beets. Toss. Sprinkle crumbed cheese. Toss. Add arugula and gently toss. Serve at room temperature.

    Thanks for your recipe. I make a similar recipe replacing the Gorgonzola with goat cheese, increasing the arugula to 8 cups, reducing the beets by half, using toasted pecans and tossing it in a homemade mustard vinaigrette. I loved your version too! Thanks! - 3/30/11

    Love roasted beets, and can rub skin off with paper towel after baking them in a oven. Love a beet salad and usually use spinach and arugula mixed, vary the nuts, and sometimes feta instead of blue, oranges chopped up and mushrooms go well too in this, Love it. thank you - 8/23/19
