Sweet and Sour Pork

Ingredients
2 tbsp Canola Oil400g (14oz) pork tenderloin, cut into thick slices1 onion, cut into chunks200g (7oz) canned pineapple chunks, drained with juice reserved1 tbsp Tomato Ketchup200g (7oz) Canned Copped Tomatoes150ml (1/4 pint) Chicken Stock1 tsp Cornflour (Cornstarch)1 Cinnamon Stick (or 1/4 tsp ground cinnamon)
Directions
Serves 4

1) Heat on tablespoon of oil in a large, deep frying pan and fry the pork for 5 minutes until golden, but not completely cooked through. Take the meat out of the pan and set aside.

2) Heat another tablespoon of oil in the pan and add the onion, frying for 5 minutes until it starts to soften. Tip the pineapple, along with three tablespoons of the juice, the ketchup, tomatoes, stock, and cinnamon stick/ground cinnamon. Bring to the boil, then simmer for 10 minutes or until the sauce had thickened slightly

3) Add the pork to the sauce in the pan and simmer for another 4 minutes. Mix the cornflour with a little cold water, add to the sauce and stir until thickened. Serve with rice, or side of your choice.
