Ingredients
12 oz (4 servings) Chef Meg's Beef Roast, sliced thinly (or another lean beef roast)4 sandwich thins or buns1/4 c plain Greek yogurt2 T blue cheese, crumbled2 c green leaf lettuce1/2 c Chef Meg's Caramelized Onions
Directions
Prepare the blue cheese sauce by gently combining the blue cheese and Greek yogurt. Layer between the bread the lettuce, beef, onions, and dressing.
Makes 4 sandwiches

    LOVED this recipe. Do not be afraid of the blue cheese sauce - it is the perfect addition to this sandwich. My husband ate his without the blue cheese but agreed after trying mine that it is better with the sauce. Why eat out when you can have this?! Wonderful! - 1/8/10

    As pictured, these rolls, are not the Arnolds sandwich thins you include in the recipe. This problem I understand from business wanting to sell their product, why mislead us here? Sub out the thins for reg. burger rolls abnd the #'s will go through the roof, especially the sodium... : ( - 3/28/12

    I just made this tonight!!!! ONE OF THE BEST RECIPES!!! It was soo goood! Instead of the Beef Roast I bought some sliced roast beef from the deli - measured out 3oz - still plenty of meat and less cals I think - Definitely a must have AGAIN!!! YUmmmy!!! - 1/14/10

    I heated the beef and onions and added some horseradish to the sauce. I used sliced roast beef from Trader Joe's and a 2 oz (80 calorie) serving was plenty. Also used nonfat Greek yogurt. - 9/30/11

    This is a really fantastic lunch, the blue cheese spread is SO good!

    I used arugula as my greens instead of lettuce and it added a nice little bit of extra spiciness.

    Also, today I heated the sandwich up for 20 seconds in the microwave, it made it a little gooey and warm and was great!
