Acorn Squash with Brown Sugar

1 acorn squash2 tsp granulated dark brown sugar1 tbsp Smart Balance Light buttery spread
Cut the acorn squash in half and remove the seeds. Place squash cut side down in a baking dish or cast iron skillet. Put enough water on the bottom of the pan to come up about 1/2 inch on the squash. Bake for about 1 hour at 350 degrees or until you can poke through the squash easily with a fork. Add a little water if needed throughout the cooking process so the squash doesn't burn. Once the squash is cooked, remove baking dish with squash from oven. Carefully turn the squash over. Add half of the Smart Balance to each half of the squash and 1 tsp of brown sugar to each half of the squash. Return to the oven for about 5 or 10 minutes until the Smart Balance and brown sugar are melted. Remove from the oven and serve.

I have never had Acorn Squash before. So when I had a chance to get some from the Food Pantry, I went for it. I found your recipe and WOW! Although, its not really filling, it is a delightful thing to have on the side! I am going to add this to my meal plan, and am going to keep this recipe! Thanks - 11/10/11

My variation is to use sugar free pancake syrup and a few chopped walnuts instead of the Smart Balance and brown sugar. Hubby also likes raisins in his and has asked for this side for Thanksgiving. He never liked acorn squash until I started fixing it for him this way. This changes make it a 5 star! - 11/8/11
