Oatmeal and Raisin Cookies

Ingredients
1/2 cup of butter1/2 cup of packed brown sugar1 tbs maple syrup1 large egg1 tsp vanilla extract1 cup all purpose flour1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 tsp cinnamon1 1/2 cups old fashioned rolled oats1 cup raisins
Directions
1. Preheat oven to Gas Mark 4/180C/350F.

2. In a mixing bowl, cream together butter, brown sugar and maple syrup until light and fluffy. Scrape down the sides of the bowl as needed. Add egg and vanilla, beating well.

3. In another bowl, sift together the flour, baking powder, baking soda, salt and cinnamon.

4. Add flour mixture to sugar mixture and mix until just incorporated.

5. Stir in oats and raisins.

6. Drop one teaspoon of dough into mounds on a parchment paper lined cookie sheet. Space mounds about an inch apart as they will spread. Bake until lightly golden brown around the edges - about 8-10 minutes.

7. Cool the cookies on the sheet for about five minutes before transferring to a wire rack to cool completely. Enjoy!
