Fresh Mozzarella, Basil, & Tomato Salad

Ingredients
One ounce fresh mozzarella cheese1 1/2 tablespoon freshly chopped basil1 Plum (or Roma) tomato sliced1 tsp olive oil1/2 tablespoon balsamic vinegar
Directions
Slice tomato. Slice fresh mozzarella cheese and place on top of tomato slices. Chop basil and sprinkle on top of cheese. Mix olive oil and balsamic vinegar, and pour over tomato slices. Chill until ready to eat.

    Quick, simple, and delicious! I'm sure I will make this often. Easy to make just one portion, or multiply the quantities for company.
    This does work with dried basil, but is best with fresh. - 10/20/14
