Chicken Breasts with Apple Stuffing

4 boneless, skinless chicken breasts2 slices reduced calorie whole wheat bread (honey wheat bread is great)1 granny smith apple, cored and diced1/3 cup reduced sodium chicken broth1 t dried sage1 t dried thyme.5 t salt.25 t pepper
Coat a shallow baking pan with cooking spray. Using a sharp knife, split the chicken horizontally, stopping before cutting all the way through. Spread open the chicken pieces and place on prepared plan.
Mix remaining ingredients. Spoon onto one half of each piece of chicken, then fold other half over. Season to taste with additional salt and pepper.
Bake 30 minutes at 400 or until done.

Sorry that I couldn't put a rating but I made too big a change and it didn't work for me. My chicken breasts were too small to stuff so I layed the stuffing on the bottom of the pan. I know now that I should have left the broth out as the stuffing got way too mushy. The chicken was moist and nice. - 2/4/11
