Crockpot Italian Bison Pot Roast

2 - 3 lb. bison top round roast 2 - 8 oz. cans tomato sauce1 1/2 C red wine1 - 1 1/2 C water3 cloves garlic, pressed3/4 t Italian herbs1/2 t oreganoolive oilKosher salt & pepper to taste
Heat olive oil in a large skillet over medium-high heat. Season bison roast with Kosher salt and pepper and add to skillet to brown on all sides.
Meanwhile, add all remaining ingredients to the crockpot, Stir to combine.
When done browning roast, immediately add to crockpot, stir to coat and cook on low for 6 - 7 hours or until meat is tender and sauce has thickened. Can be served over whole wheat couscous or quinoa.
