Black bean and sweet potato chili

Ingredients
Black Beans, 2 cupsDark Red Kidney Beans, 1 cupSweet potato, 1.5 cup, cubesPeanut butter, 1 tbspSweet bell peppers, 2 peppers, large, chopped - yellow and red are bestOnions, raw, 1 cup, choppedPetite Cut Diced Tomatoes, 1.5 cup1 small can tomato pasteMolasses, 2 tbspSalt, 1 tspSweet Corn, 1 can, drained (I like the white and yellow crispy kernels)Chili powder, 2 tbspCumin, 1 tbspPepper, red or cayenne, 1 tsp (or hot sauce to taste)Fresh Garlic, 6 cloves, minced - or a couple tablespoons1-2 cups Water - enough to almost come over the top of the stuff in the pot** you can add more other veggies, too, like portabella mushrooms, butternut squash instead of sweet potato, etc.
Directions
Throw everything into a slow cooker and cook on high 5-6 hours.

Add hot sauce to taste.

    I make this every sunday and portion into containers for the week. IT IS FANTASTIC!!! I skip the molasses and tomato paste. I use the whole can of corn and beans, but wash them first in a strainer. I also add 2 cubes of chicken broth for just a little more flavor. - 1/21/10
