Ingredients
6 boneless skinless chicken thighs2/3 c Miracle Whip Light1 (10 3/4 oz) can Healthy Request Cream of Chicken Soup1 tsp curry powder
Directions
Rinse chicken, pat it dry, and place in slow cooker. Keep it in a single layer as best you can.

Mix the remaining ingredients in a medium bowl then pour evenly over the chicken.

Cook on high for about 4 to 5 hours. Stir gently before serving.

Most similar recipes call for one teaspoon of curry powder. If you are a lover of curry, put in as much as you want. I generally use a VERY rounded tablespoon!

Though any mayo will likely work ok, and I prefer Hellmann's in most cases, I believe Miracle Whip specifically makes this recipe. Gives it a certain tang!

Alternative way of making this is to mix the sauce right in the slow cooker, add cubed chicken and toss. (Spares you a bowl to clean but leaves a dirty cutting board in its stead.)

Try other kinds of meat or adding different sorts of Indian spicings.

    This is an excellent recipe. I made it with chicken breasts that I cooked first and then shredded. I'm a big curry fan, so I increased the amount dramatically. If you are not a curry fan, try using garam masala, a sweeter Indian spice that you can find in most stores. Served it with saag over rice! - 5/4/08

    This is the 2nd time I've made this great recipe. I forgot I was out of curry so I used Paprika. It was awesome. We add cauliflower to the pot last half hour or so in place of the rice. Think I'll throw i some peppers too. - 4/19/10

    I upped the curry powder and added corriander, garlic salt, onion powder and chili sauce. I also cooked it with baby potatoes, water chestnuts, and bell pepper. Very delicious! - 1/20/10

    This was very simple to make and delicious. I cubed the chicken and it cooked in my crock pot on Low for 4 hours and it was ready. I would recommend spraying the crock pot with PAM before you start, as the soup mixture stuck to the sides and bottom somewhat. Definately a keeper, though! - 4/27/08

    I was REALLY skeptical. I despise Miracle Whip. But I tried it, and it was delicious. My son and husband liked it, too. I upped the curry powder because we love the flavor of curry. Next time I may add some frozen peas and carrots shortly before serving. - 1/2/13

    Fantastic recipe, and Oh-so-Easy to make on a busy night! I had garam masala on hand, but no curry. It was flavorful, but I wanted that extra kick. I added what I had--cayenne pepper, and between the two spices, it had a great medium spice to it. Would definitely make again! - 4/13/12

    I added all of the recommended ingredients but I substituted chicken thigh for chicken breast, Miracle whip for lite mayo and cream of celery soup and the teaspoon of curry powder. I also added jalapeno salt and Pico De Gallo con Limon. My kitchen smells amazing right now. I can't wait to try it!! - 8/23/10

    Oddly I was never a fan of Miracle Whip either, but for some reason it excels in this recipe. The "tang" that normally repulses me on sandwiches and things seems to add something here. Very strange. :) Any mayo certainly works tho! Thanks!

    Chicken was fully cooked after 1 hour on high and 2 hours on low in my slow cooker. It came out so moist and tender! The sauce came out thicker than I prefer; will add chicken broth to thin. The taste was good, but did not taste like an authentic curry. Will experiment with adding spices. - 11/7/09
